A delicious snack made using leftover cooked rice.
LEFTOVER RICE TIKKI Ingredients
1½ cups leftover cooked rice 3 tbsps oil 2 green chillies chopped 1 large onion, chopped 1 medium carrot, grated ¼ cup chopped French beans 3 tbsps boiled and mashed green peas Salt to taste #alkaskitchen #alksuggests #alkas #indiastopchef 1½ tbsps semolina 1 tsp red chilli powder ½ tsp garam masala powder Tomato ketchup to serve
Method
1. Heat 1 tbsp oil in a non-stick pan, add green chillies and onion. Sauté till onion turns translucent.
2. Add carrot, French beans, green peas and salt. Mix well. Sauté for 2-3 minutes on medium heat.
3. Take leftover rice in a bowl. Add the cooked mixture and mix well. Add semolina, salt, red chilli powder and garam masala powder. Mix well. Divide mixture into equal portions and shape each portion into medium sized tikkis.
4. Heat remaining oil in a non-stick tawa, add tikkis and shallow fry on medium heat till golden brown on both sides.
5. Serve hot with tomato ketchup/achaar
